Broccoli Tomato Soup
This Broccoli tomato soup is a wholesome and nutritious blend of tender broccoli florets sauteed in aromatic onions and garlic, simmered to perfection in a savory vegetable broth.
This broccoli tomato soup reminds me of my childhood. Looking at it right now it was like a poor man’s meal that tasted like a million-dollar meal. My mother would serve her tomato soup with some stale bread and boy did we not enjoy every bite of that crunch bread dunked in the delicious tomato soup. How to make this Easy Broccoli Tomato Soup
- In a large saucepan, sauté onions for 2 minutes.
- Add minced garlic and broccoli florets and sauté for another 5 to 10 minutes, keep an eye on the onions and garlic, don’t burn them. Then remove the broccoli florets only and set them aside.
- Grate the tomatoes and add them to the saucepan. Cook with pot uncovered for 3 minutes.
- Add 2 cups of vegetable broth and bring it to a boil. You can season your soup at this point, I used salt and pepper and a bit of sugar to balance the acidic of the tomatoes.
- Let the soup simmer on medium-high heat for 3 to 5 more minutes. After this, you can remove the pot from heat and dish then top your soup bowls with the sauteed broccoli florets. Enjoy
Tips and mistakes to avoid as a beginner cook
- Don’t use water in a place of broth cause this can result in a less flavorful soup; using vegetable or chicken broth adds depth to your broccoli and tomato soup.
- If you decide to use store-bought broth like me, please do a taste test before you add seasoning that contains salt because broths are salty on their own unless you bought a low-sodium one.
- If you don’t like the texture of this Broccoli Tomato Soup or you just like your tomato soup smooth then you can blend it along with the broccoli florets.
How to store leftover Tomato soup
Always allow your soup to cool down to room temperature. Transfer the leftover broccoli tomato soup into an airtight container and keep it in the fridge for up to 3 days. Keep the broccoli florets in a separate container unless you decided to blend your soup for smoother textures.
To freeze for a longer period you can store it in an airtight container or ziplock bags, ziplock bags save space in your freezer. It can be stored for up to 3 months.
How to reheat
From the fridge, you can warm it in the microwave or on a stove. In a small saucepan, heat it over medium heat until it’s warm, if the soup is watery, just let it simmer on medium heat with the pot uncovered for the excess liquid to evaporate.
From the freezer, thaw it in the fridge or over the counter then use the methods mentioned above to reheat.
How to elevate your Broccoli tomato soup
- You can add chili flakes for that final kick of heat.
- If you like smooth texture soup then you can use a stick blender to blend it.
- If you decide to make it smooth, consider topping it with crispy croutons for a deluxe bowl of broccoli tomato soup.
