This celery and tomato soup recipe is one of the quickest and most easy recipes I’ve ever shared on this blog. It is delicious and calls for minimum ingredients which are a staple in most households. If you are like me and love tomato based soup recipes and seafood then I am almost certain you will enjoy this calamari and tomato soup recipe.

I love this tomato celery soup recipe because its so versatile, it can be easily made a vegan recipe by using vegetable broth or water. It pairs very well with different dishes such as pasta, rice, and freshly baked crusty bread.

How to make tomato celery soup

  1. Begin by preparing your vegetables. Take your fresh celery stalks and chop them into small, even pieces to ensure they cook evenly. Next, dice a medium-sized onion, taking care to create small, consistent cubes for even cooking. Finally, grab your ripe tomatoes and grate them.
  2. In a deep saucepan, pour in a generous amount of olive oil and heat it over medium heat. Once the oil is warm and shimmering, add the chopped celery, diced onion, and a clove of minced garlic. Sauté this aromatic mixture for up to 5 minutes, stirring occasionally, until the onions are soft and translucent, releasing their sweet aroma.

  1. Next, incorporate the grated tomatoes into the saucepan. Season generously with freshly cracked black pepper and a dash of paprika to bring a subtle warmth to the dish. Allow the tomatoes to simmer uncovered for about 5 minutes, letting the flavors meld and intensify.

  1. Pour in the chicken broth, stirring it into the vegetable mixture. Allow the soup to continue simmering for another 5 minutes, letting all the ingredients blend into a harmonious concoction. Perform a taste test to ensure the flavors are balanced. If you find the tomatoes a tad too acidic, you can gently offset this by stirring in a teaspoon of sugar or honey, which will mellow the acidity without overpowering the soup’s natural flavors.

Tips and mistakes to avoid for beginner cooks

  1. If you use water in a place of broth this can result in a less flavorful soup; using vegetable or chicken broth adds depth to your broccoli and tomato soup. To compensate for the flavor you can add some of your favorite spices or some stock cubes or powder.
  2. If you decide to use store-bought broth like me, please do a taste test before you add seasoning that contains salt because broths are salty on their own unless you bought a low-sodium one.

How to store leftover tomato and celery soup

Allow the soup to cool down then transfer it into an air-tight container and put it in the fridge. This tomato and celery soup will be good for up to 4 days.

You can freeze it for up to 3 months. Soup lover Tip: To save on space in your freezer, store your tomato soup in serving portions in zip lock bags and let the air out before you zip. Stack them up on top of one another in the freezer.

How to reheat

From the fridge, reheat in the microwave or a saucepan over medium heat until it’s warm, and if it looks watery just let it simmer with the pot uncovered.

From the freezer, let it thaw then warm it the same way as if it was from the fridge.

Instructions

  • Add the chicken broth and let the soup simmer for up to 5 minutes. Do a taste test and adjust where necessary. If the tomatoes are too acidic add a teaspoon of sugar or honey. Your tomato celery soup is ready to be served.
