Ingredients

  • 3 Tomatoes
  • 2 stalks Celery
  • 1 cup Chicken broth
  • 1 Onion
  • 1 tbsp Minced garlic
  • 1 tbsp Olive oil

  • 1 tsp Sugar

Instructions

  • Prepare the veggies. Chop the celery, dice the onion, and grate the tomatoes.
  • In a deep saucepan, warm up olive oil then add the chopped celery, diced onion, and minced garlic. Sauté for up to 5 minutes or until the onions are tender.
  • Add the grated tomato and season with black pepper and paprika then let the tomatoes simmer for 5 minutes with lid off.
  • Add the chicken broth and let the soup simmer for up to 5 minutes. Do a taste test and adjust where necessary. If the tomatoes are too acidic add a teaspoon of sugar or honey. Your tomato celery soup is ready to be served.
