This simple 3-ingredient potato soup recipe is one of the best soups I’ve ever made. Despite its simplicity, requiring only potatoes, onion, and broth, it’s incredibly delicious! Don’t be deceived by the short ingredient list; this soup is sure to impress.

This easy chunky 3 ingredients potato soup is simple yet has bold and tasty flavors and it always brings back the memories and comforts of home. I like to make hearty comfort meals to create memories for my kids just like how my mother and grandmother have done for me. Almost everything with potatoes in it automatically becomes a comforting meal in my opinion just like this Steak AU Poivre Soup.

  1. Potatoes: Use starchy potatoes like Russet or Yukon Gold. Russet potatoes will give the soup a fluffier texture, while Yukon Golds will make it creamier
  2. Onion: A yellow onion is ideal for this recipe. Yellow onions have a balanced flavor that becomes sweet when cooked, adding depth to the soup.
  3. Chicken Stock: Use chicken stock or broth. Chicken stock adds a rich, savory base to the soup. If you prefer a vegetarian option, you can substitute with vegetable stock. For a more robust flavor, homemade stock is always a great choice.

How to make Potato Soup with just 3 ingredients

  1. Peel the potatoes and cut them into 1 or 2 inches chunks.
  2. Dice the onion
  3. In a large saucepan, bring 4 cups of chicken stock or broth to a boil.
  4. Add the potatoes to the pot and the diced onions and allow that to cook for 20 minutes or just until the potatoes are fork tender. If you like you can add a tablespoon of olive oil as well.
  5. Once the potatoes are cooked, mash a portion of the potatoes and leave a few chunks of potatoes. If you want a smooth potato soup then you can mash all the potatoes. If the soup gets too thick, gradually add more broth until it reaches your desired consistency.

Tips and common mistakes to avoid for beginner cooks

  1. Whenever you use store-bought broth and stock, do a taste test before you add any salt. They have high sodium content unless you use a low-sodium broth or a homemade broth where you have control of the salt.
  2. This soup taste even better with some toppings such as crispy cold meat, chili flakes or shredded cheese for those savory and umami flavors.
  3. It can easily be made vegan to accommodate vegan friends and family by using vegetable broth
  4. If you decide to use a blender, do not blend on high speed cause blended potatoes can be slightly slimy.

If you find yourself with leftovers of this 3 ingredients potato soup (I doubt you will because it’s so delicious), here’s how to store and reheat it:

  • Cool Down: Allow the soup to cool to room temperature before refrigerating it. Hot soup can raise the temperature inside your fridge, affecting the food safety of other items. I am pretty sure you don’t want that.
  • Refrigerate: Once your potato soup has cooled down, it’s time to transfer it into an airtight container then in the fridge it goes. It should stay fresh for up to 3-4 days.
  • Reheat: To reheat, gently warm the soup over low heat on the stovetop. Be sure to stir frequently to prevent sticking. Alternatively, you can use a microwave, but heat it in short intervals and stir in between to ensure even heating.
