- 4 Potatoes
- 1 Onion
- 4 cups Chicken stock
- 1 tbsp Olive oil optional
Peel the potatoes and cut them into 1 or 2 inches chunks.
Dice the onion
In a large saucepan, bring 4 cups of chicken stock or broth to a boil.
Add the potatoes to the pot and the diced onions and allow that to cook for 20 minutes or just until the potatoes are fork tender. If you like you can add a tablespoon of olive oil as well.
Once the potatoes are cooked, mash a portion of the potatoes and leave a few chunks of potatoes. If you want a smooth potato soup then you can mash all the potatoes. If the soup gets too thick, gradually add more broth until it reaches your desired consistency.
