How to make Beef and Broccoli soup
- In a large and deep cooking pot, place the chunks of beef. Pour in one cup of broth along with one cup of water. Bring to a boil, and maintain the boiling process until the beef becomes tender, which should take approximately fifteen to twenty minutes.
- After the beef has reached the desired tenderness, add the chopped onions and chopped celery to the pot. Add your selection of spices and herbs according to personal preference. In this instance, dried Italian herbs, oregano, black pepper, and smoked paprika were is what I used. Allow the soup to cook for an additional five minutes.
- Next, add the broccoli florets to the pot. Allow the soup to simmer for another five minutes. The broccoli is cooked for a shorter duration to maintain its firmness.
At this point, the beef and broccoli soup is ready to be served.
Tips and mistakes to avoid as a beginner cook
- If you decide to use store-bought broth like me, please do a taste test before you add seasoning that contains salt because broths are salty on their own unless you bought a low-sodium one.
- You are welcome to use just the beef broth without water.
- To cut the cooking time of this beef broccoli soup cut the beef into smaller bite size, they will cook faster than mine did in this recipe.

How to store leftover Broccoli soup
Always allow your soup to cool down to room temperature. Transfer the beef broccoli soup into an airtight container and keep it in the fridge for up to 3 days. Keep the broccoli florets in a separate container, the longer they stay in the broth they will become mushy.
To freeze for a longer period you can store it in an airtight container or ziplock bags, ziplock bags save space in your freezer. It can be stored for up to 3 months.
How to reheat
From the fridge, you can warm it in the microwave or on a stove. In a small saucepan, heat it over medium heat until it’s warm.
From the freezer, thaw it in the fridge or over the counter then use the methods mentioned above to reheat.

Ingredients
- 1 pound Beef
- 1 head Broccoli
- 1 cup Beef broth
- 1 Onion

Instructions
- In a deep saucepan boil the beef chunks with 1 cup of broth and a cup of water. Boil it until its soft, 15 to 20 minutes.
- Add the chopped onions and celery to the pot. Season with your favorite spices and herbs, I used dried Italian herbs, oregano, black pepper, and smoked paprika. Continue to cook for 5 minutes.
- Go in with the broccoli florets, and let the soup simmer for the last 5 minutes. I like my broccoli crunchy so I don't cook it for long. Your beef and broccoli soup is ready to be served.
