- 1 pound Beef
- 1 head Broccoli
- 1 cup Beef broth
- 1 Onion
- 1 Celery
- Seasoning
In a deep saucepan boil the beef chunks with 1 cup of broth and a cup of water. Boil it until its soft, 15 to 20 minutes.
Add the chopped onions and celery to the pot. Season with your favorite spices and herbs, I used dried Italian herbs, oregano, black pepper, and smoked paprika. Continue to cook for 5 minutes.
Go in with the broccoli florets, and let the soup simmer for the last 5 minutes. I like my broccoli crunchy so I don't cook it for long. Your beef and broccoli soup is ready to be served.
