Nothing hits home like a nice cozy bowl of warm soup while snuggling comfortably on a couch during winter nights. When I posted this recipe on my tiktok I received a lot of comments and people complained that I didn’t use 3 ingredients. Please tell me you are not one of them, unless you guys want me to clearly state 3 main ingredients because honestly when was salt and pepper ever an ingredient?

To be honest, if this is your first time on this blog, I would like to notify you that I’m not strict on seasoning. You do you boo and what tastes good to me in terms of spices and seasoning might not work just as good for you. Same applies to this easy cauli soup.

How to make cauliflower soup with only 3 main ingredients

  1. Prepare your veggies, finely dice the onion and grate the cauliflower.
  2. In a pot add 2 tablespoons of olive oil then saute the onion for 5 minutes on medium high heat.

  1. Add the grated cauliflower and 2 cups of vegetable broth and allow it to cook for 5 to 10 minutes. Season with ground black pepper or any spices of your choice.

  2. Blend with a stick blender in the pot or transfer it to a blender and blend until it’s smooth.

Mistakes you should avoid when making this recipe

I’m going to be very honest with you, I didn’t get this right in the first go. On the 3rd try, I was satisfied with the taste and texture of this cauliflower soup. I want to share my trial and errors with you so that you won’t have to waste ingredients and have to throw it out.

  1. Get your liquid content right, adding too much broth will make your soup too watery. I wanted the perfect velvety texture and consistency and if this is what you want as well then stick to the amount of liquid this recipe calls for.
  2. Don’t make the mistake of adding salt while you have salt in your vegetable stock. At first I used a stock cube and melted it with hot water but it seemed like I didn’t add enough water as the soup was too salty. On my second attempt I used low sodium vegetable broth and that’s when I got it right.
  3. Don’t be tempted to substitute the vegetable broth with just plain water, it tasted awful and flavor less.
