Finely chop the onion and celery. Mince the garlic if using fresh garlic. Peel and chop the potatoes into small chunks. Peel and slice the carrots. Shred the smoked chicken breast.
In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the chopped onion and sauté for about 3 minutes until it becomes soft and translucent. Add the minced garlic and cook for another 2 minutes, stirring to avoid burning.
Sprinkle in the Cajun seasoning, black pepper, oregano, and smoked paprika. Stir them with the onions and garlic. Let the seasonings toast for about 1-2 minutes, just until they release a warm aroma.
Add the chopped potatoes, sliced carrots, and chopped celery to the pot. Stir well so the vegetables are coated with the seasoned onions and garlic.
Add the shredded smoked chicken breast to the pot. Pour in 2-3 cups of chicken broth, enough to cover the ingredients.
Bring the soup to a simmer and let it cook on medium heat for 15-20 minutes, or until the potatoes and carrots are tender.
If you’d like a creamy soup, pour in ¼ cup of cream and stir it into the soup, this is totally optional.
Taste the soup and adjust the seasoning if needed. Sprinkle with chopped fresh coriander for a burst of freshness.
