Mexican Star Soup

Ingredients

  • 1 cup Pasta (uncooked) (Star-shaped or any pasta)
  • 1 cup Chicken broth
  • 2 Tomatoes
  • 2 tbsp Tomato paste
  • 1 tbsp Olive oil
  • 1 Onion
  • 1 tbsp Garlic
  • Seasoning Dried oregano, black pepper, paprika and a pinch of salt)

Instructions

  • Dice the onion and mince the garlic if it's cloves.
  • In a saucepan, sauté the onion and garlic until the onions are translucent. this could take up to 5 minutes.
  • Meanwhile, grate the tomatoes then add them to the onions. Cook these with the lid off for 5 minutes.
  • You can go in with the star-shaped pasta or any pasta of your choice. Followed by seasoning and tomato paste then chicken broth.
  • Allow the soup to cook with the lid closed just until the pasta is cooked. Once the pasta is cooked, the average time it takes for the pasta to cook is 8-10 minutes. Do a taste test and adjust seasoning if needed then serve. See my tips above in the post on how to adjust flavors and taste.
