Start by preparing the veggies: Chop the cabbage, peel and slice or dice the carrot, dice the onion, and green pepper.
In a large pot, heat a tablespoon of olive oil on medium-high heat. Add the chicken sausages and brown them. Once brown, remove them from the pot and set them aside.
In the same pot, add the onions, carrots, and peppers and sauté for 5 minutes.
Add the cabbage and one more tablespoon of olive oil and sauté for a few minutes then add the chicken broth and let it cook for 10 minutes.
Chop the chicken sausage into bite-size chunks, add them back to the soup pot and cook for 5 more minutes.
Do a taste test and add a pinch of salt if needed, then your Irish cabbage soup is ready to be served.
