Ingredients

  • 8 oz White Kidney beans (250g)
  • Fresh dill
  • 1 Large carrot
  • 1 Celery stalk
  • 1 Onion

Instructions

  • Cook the beans with 3 to 4 cups of water for about 2 hours. This time could be less if you soak the beans in water overnight.
  • Meanwhile chop 1 large carrot, 1 medium white onion, and 1 stalk of celery.
  • Once the beans have cooked, add the carrots, onions, and celery, and allow it to cook for about 20 minutes. Add more water if needed.
  • Season with seasoning of your choice, I used teaspoons of oregano, black pepper, dried mixed herbs, and salt for taste.
  • Do a taste test, if the beans and carrots are tender then you can add the dill and cover the pot, you may remove from heat but leave the pot covered for 5 more minutes for the dill to kinda cook.
  • Ready to serve and enjoy!
