Ingredients

  • 2 lbs Italian sausage
  • 1 cup Pasta (Ditalini) uncooked
  • 1 can Canned tomatoes
  • 4 cups Beef broth
  • 1 Onion
  • ½ Bell peppers Red, green and yellow (Half each)
  • 2 Baby spinach handfuls
  • cup Parmesan cheese
  • 1 cup Cheddar cheese
  • 2 tbsp Cream cheese
  • 1 cup Fresh cream
  • 1 stick Butter
  • 1 tbsp Italian herbs spice
  • Salt to taste

Instructions

  • Prep your ingredients: Chop the onion. chop the red, green and yellow bell peppers. Remove the casing from the Italian sausage and keep all your cheeses ready and shredded so they melt easily.
  • Heat your pot on the stove. Add the sausage and break it up into bite-sized pieces. Let it brown completely. Once it’s cooked, remove it from the pot and set it aside.
  • In the same pot, add the butter and chopped onion. Let the onion soften and get a bit of color.
  • Add in the chopped bell peppers and sauté everything together until the veggies soften and start smelling good.
  • Pour in the canned tomatoes and stir it into the veggies. Right after that, add your beef broth and mix well.
  • Add the pasta and stir so everything is combined. Close the lid and let the pasta cook until it’s al dente.
  • Season with Italian herbs spice and a little salt. Add the browned sausage back into the pot and stir it in. Close the lid and let it cook for a couple of minutes.
  • Add the baby spinach and fold it into the soup. Close the pot again and let the spinach soften for a few minutes.
  • Add the cream cheese, fresh cream, cheddar cheese and parmesan cheese. Switch off the stove and let the heat of the soup melt everything together until it’s creamy, smooth and fully combined.
