Be Our Guest French Onion Soup (Copycat recipe)

Ingredients

  • 4 Large Onions
  • 8 oz Mozzarella cheese 240g
  • 1 Baguette
  • 3 tbsp Olive
  • ½ cup Sherry wine / Sherry vinegar
  • 5 cups Beef broth
  • 2 Bay leaves
  • Salt and pepper to taste

Instructions

  • Prepare the onions and caramelize them, cut the onions into halves then slice them. Heat a skillet or large saucepan on medium heat and add four tablespoons of olive oil followed by the onions. Cook/ fry/ saute the onions uncovered for 40 minutes to an hour stirring occasionally until the onions look caramelized.
  • You can now add half a cup of sherry vinegar or wine to the pot and allow it to cook for 10 minutes so the flavor can blend in. This time you can cover the pot or skillet with a lid.
  • Add 5 cups of beef stock or beef broth and add bay leaves then let the soup cook for another 30 to 35 minutes, the onions should be tenderly cooked at this time. Season your soup with half a teaspoon of salt and black pepper.
  • Meanwhile, you can Slice the French bread and prepare it for toasting while the soup is cooking. I sliced them then lined them on a baking tray, and toasted both sides until they were golden brown. I used butter on the edges as they turned to burn before the whole slice was nicely golden brown.

  • Scoop the soup with a soup ladle into your serving bowl. Don't fill the bowl to the top, just may ¾ of the bowl to leave some space for the toasted baguette. Put your toasted bread top, I could only fit 2 slices then followed by your grated cheese. For the cheese lovers, you can fill the soup halfway in the bowl to make more room for your cheese.
  • Put your soup bowls on a baking tray. Broil at 400^F preheated oven for 5-8 minutes or just until the cheese melts and starts to bubble up with some golden brown look on top. Enjoy
