I’m the kind of person who always likes to challenge themselves when it comes to cooking. Whenever I go to a restaurant and order a meal, if I was impressed with that dish, I always try to replicate it and make it the comfort of my own home and this saves me a few bucks cause baby these restaurants don’t come cheap. Honest disclaimer though, I don’t always get the dishes right and it takes me cooking and trying different things until I get that taste I experienced at the restaurant.

So you’ve been to Fantasyland at Magic Kingdom and ordered French Onion Soup from Be Our Guest and thought it was delicious? What you need for this Copycat French Onion Soup Recipe

  1. Onions are the main ingredient for this soup, the larger the better in size. I used about four large sweet onions, if your onions aren’t as sweet you might have to sprinkle about a teaspoon or two of sugar in your soup.
  2. Olive oil : I used olive oil to caramelize the onions but a stick of butter will also get the job done here.
  3. Mozzarella cheese for a perfect cheese melt you can top your Be our guest French onion soup with either Mozzarella or cheese like Brie or Gruyère.
  4. Baguette: You know what, I love me some garlic bread y’all but any type of bread will work as long as it’s toasted.
  5. Sherry vinegar: I wanted my copycat French onion soup to have minimal alcohol and I mixed it with some cranberry juice but if you don’t have a problem with alcohol, go ahead and use cherry wine.
  6. Beef Stock/ Broth: I think I have an idea of what the difference is between stock and broth but you know they all play the same role and taste great anyway.
  7. Bay leaves: Dried bay leaves give this soup a boost in savory flavor, it does really make a difference. 
  8. Seasoned with (Salt and black pepper)

How to make Be Our Guest French Onion Soup Copycat Recipe

  1. Prepare the onions and caramelize them. I went for the largest onions I could find in the supermarket so I had to cut them in halves before slicing them. The slices shouldn’t be too thin or too thick, just medium and enough to hold their shape once they are succulent. Heat a skillet or large saucepan on medium heat and add four tablespoons of olive oil followed by the onions. Cook/ fry/ saute the onions uncovered for 40 minutes to an hour stirring occasionally until the onions look caramelized.
  2. You can now add half a cup of sherry vinegar or wine to the pot and allow it to cook for 10 minutes so the flavor can blend in. This time you can cover the pot or skillet with a lid.
    Add 5 cups of beef stock or beef broth and add bay leaves then let the soup cook for another 30 to 35 minutes, the onions should be tenderly cooked at this time. Season your soup with half a teaspoon of salt and black pepper.
  3. Meanwhile, you can Slice the French bread and prepare it for toasting while the soup is cooking. I sliced them and lined them on a baking tray and toasted both sides until they were golden brown. I used butter on the edges as they turned to burn before the whole slice was nicely golden brown.
  4. Assemble the French Onion Soup in the Be Our Guest style
  5. Scoop the soup with a soup ladle into your serving bowl. Don’t fill the bowl to the top, just make ¾ of the bowl to leave some space for the toasted baguette. Put your toasted bread on top, I could only fit 2 slices then followed by your grated cheese. For cheese lovers, you can fill the soup halfway in the bowl to make more room for your cheese.
  6. Put your soup bowls on a baking tray. Broil at 400^F preheated oven for 5-8 minutes or just until the cheese melts and starts to bubble up with some golden brown look on top.

Make Ahead instructions

You can make Be Our Guest French Onion Soup ahead of time. You will need to cook the French onion soup as per my above instructions. Once you are done, let it cool down completely then transfer it into an airtight container. 

Slice your bread and toast and put it in a zip lock bag and store in your fridge if you plan to serve the soup a few days later. 

Shred your cheese as well and store it in a zip lock bag.

On the day you want to enjoy your Be Our Guest French Onion Soup you can just assemble and broil then enjoy.

  1. If the onions change color to golden brown quickly, you need to lower your heat and maybe add a tablespoon of water to deglaze the skillet.
